I’m going to keep this one short and sweet—just like dessert! It looks like I’m officially back in my baking era. I might be a little rusty, but practice makes perfect, right? Last week I tried lemon bar cakes… and let’s just say they didn’t quite get the memo to set properly. I used to bake so much I probably should’ve opened my own bakery! A lot of my inspiration definitely came from watching Martha Stewart and trying all the desserts in her cooking books.
Tonight’s tasty experiment: strawberry cupcakes from scratch! Not my first time making cupcakes or frosting from scratch, but it is my first time doing strawberry cupcakes completely from scratch. Fingers crossed they turn out amazing! I can at least confirm the batter tasted delicious (quality control is important!).
My only true complaint is my small kitchen. I only have about 3 feet of working space. One day I will have a bigger kitchen with all the tools at my fingertips. I’m dreaming of the day we buy our future home and I can finally get that big 7-quart KitchenAid mixer and proudly leave it on the counter.
A few things still on my baking bucket list? Bread and homemade pasta! Yes, I know—like I have all this extra time. But here’s to getting stronger, gaining my energy back, and doing all the things I used to love… starting with lots of sweet treats! Any sweet tooths out there?
